I used the same pickling recipe as I did for cucumbers, so mine may be more garlic heavy then the typical ones I am starting to see for daikon that include carrots and cilantro.
Harvesting daikon! This is one of the veggies I started growing without ever really haven eaten it much. When I do, i'll chop it up raw to add to sandwiches or salads, it's a spicy radish. These daikon are so large though, I can't use it all up fast enough so I wanted to try pickling it like Dave has, adding some of the leaves as well. We will see if I enjoy pickling it as much as I love pulling it out of the ground.

My parents spotted some on Tuesday but I hadn't been aware of any. When Dave and I showed up today there was at least 10! This is the first time I have participated in growing cucumbers and fruits have actually formed!!! A step forward! I was worried about losing these large ones so convinced Dave we should harvest these 5. Color may indicate too little or too much water?
On first bite one was crisp and juicy, then tasted slightly unripe. Dang it!!! I may have been too eager to harvest and here I was with 5 of them; this first one had a place for seeds but in half of it, no seeds had yet formed. Big step backwards. But, I decided to try my first pickling attempt with these none the less using this recipe but playing around with the type of spices and proportions. A step forward!!! Using a small pickle jar and a larger mason jar, I shoved in the remaining cucumbers sliced up and pierced with a fork after mixing 1 - 1.5 tablespoons of salt with the water. Sliced up 5-8 cloves of garlic to each and those floated to the bottom so also tried to stuff more cucumber in and squeeze some garlic between them at the top since my slices didn't reach the bottom. Added cayenne pepper and red chili flakes and some coriander seeds that I still have from our past cilantro going to seed. I'll check on them in 3-4 days. |
