Ingredients:
- 1 pound dried black beans (about 2 1/2 cups), rinsed

- 1 tablespoon fresh lime juice
- 1/2 ripe avocado, chopped
Miso salmon the previous night left us with an entire container minus 3/4 teaspoon of miso so now we are experimenting bi-nightly with miso soup. We really just raid our fridge and follow our hearts on this one (we as in Carlos): vegetable broth, tofu, crimini mushrooms, asparagus, kale, soba noodles, cilantro, ginger, garlic, sprouts, onion.
- 1 (1 pound) package frozen pepper and onion stir fry mix

- 1 cup shredded Cheddar cheese
