On first bite one was crisp and juicy, then tasted slightly unripe. Dang it!!! I may have been too eager to harvest and here I was with 5 of them; this first one had a place for seeds but in half of it, no seeds had yet formed. Big step backwards. But, I decided to try my first pickling attempt with these none the less using this recipe but playing around with the type of spices and proportions. A step forward!!!
Using a small pickle jar and a larger mason jar, I shoved in the remaining cucumbers sliced up and pierced with a fork after mixing 1 - 1.5 tablespoons of salt with the water. Sliced up 5-8 cloves of garlic to each and those floated to the bottom so also tried to stuff more cucumber in and squeeze some garlic between them at the top since my slices didn't reach the bottom. Added cayenne pepper and red chili flakes and some coriander seeds that I still have from our past cilantro going to seed. I'll check on them in 3-4 days.
